Verde Fuego Mixing Huacatay (Black Peruvian Mint) and Rocoto
Once we had Sabancaya and Misti Uchu in the line up, it was hard not to notice how similar these two look so we thought about the best way we could change flavor and presentation.
Huacatay (black Peruvian mint) came to mind since it's use in cheese sauces and stews in Peruvian cuisine.
This herb combined with the Rocoto pepper gave this Fuego a very interesting dill/pickily flavor that people love due to being so different.
